Seven Canyons is thrilled to have Executive Chef Cord Chatham at the helm of Seasons’ culinary operations. Since graduating from the Arizona Culinary Institute in 2006, he has since established himself as an authority within the culinary industry, earning numerous accolades including AZ Travel and Tourism Heart of House Manager of the Year. And further building on his leadership and culinary expertise, Cord achieved Forbes Five Stars & AAA Five Diamond ratings at Kai Restaurant, the only restaurant in Arizona to ever achieve such ratings.

His philosophy in the kitchen is, “Everything is relative, but there is a standard that must not be deviated from.” That philosophy is evident in every dish he prepares. Reining his craft is his fervor for blending the freshest, seasonal, and local farm-to-table ingredients, into savory creations. And with an emphasis on fresh, organic and sustainable foods, he proudly boasts the creation of a bountiful on-site restaurant garden.

Chef Cord works with a great deal of energy and is passionate about his profession. He is dedicated to providing a consistent and memorable experience to the members. He is active in the community and regularly participates in youth activities with his family. Cord has been married to his wife Loren for seven years, and has three children and one granddaughter.

The perfect pairing to Chef Cord’s culinary talents is Theresa Swanson, who serves as Seasons’ Food & Beverage Director and Events Manager. She has extensive hospitality experience and a passion for detail and exceptional service. She has successfully aided Seven Canyons in achieving the Golden Fork Award in 2016 for the most improved golf club restaurant and bar. Theresa, originally from New Jersey, has been a resident of the local community for over 10 years. Outside of work, she enjoys the outdoors, wine, food and warm weather and spending time with her husband. She is married to Shawn and has a young son.
