Australian fitness trainer Kayla Itsines has an “easy and delicious breakfast idea” for you — it’s poached eggs served on bread, with some smashed avocado, salmon, halloumi, or bacon. Delicious, isn’t it?
Kayla captioned the post, “I love breakfast, but I always find it so hard to choose because there are so many great options!! Although I don’t normally like poached eggs, I will eat them when they are served like this. This is also super easy to cook at home.”

- Toast two slices of bread (of your choice).
- Mash half an avocado with a fork and add a squeeze of lemon juice.
- Poach, scramble or fry your eggs.
- Layer the smashed avocado and eggs on the toast.
- Add your favourite extras like salmon, halloumi or bacon.
- Season with salt, pepper, or chili flakes to taste.
Simple yet satisfying, isn’t it? However, when it comes to eggs, there’s always more to explore. Apart from being a phenomenally nutritious food source, eggs can feature in many meals, especially as a quick fix. For example, if there’s leftover bacon or ham in your fridge, make an omelette. It has poached eggs placed on hung curd, with warm and melted spiced butter poured all over — the perfect recipe when you want to rustle up something quick with bare minimum ingredients.
